Bar BQ Café is a restaurant for modern urban people, who like tasty meals and prefer to combine pleasure and pleasure.

The history of Bar BQ Café started in 2010 when the first restaurant in Moscow was opened on Pyatnitskaya street. The concept of a restaurant was created by its owner Henrik Winter and his wife Julia.
Henrik was born in USA and was brought up in France. Starting as a chef he made the whole way up and became the owner of boutique hotel in French Riviera, which was included into Michelin Guide. 20 years ago he moved to Russia and still lives there.
In a couple of years three more Bar BQ Cafés were opened. Now, in addition to the most popular on Pyatnitskaya street, there is one on Trubnaya square, in “Okhotny Ryad” shopping mall with its own terrace right next to the fountains and Alexandrovsky garden, and another one in Khimki in MEGA shopping mall.

The concept is still the same, restaurants are 24 hours open and here you can find dance-flour, high variety of alcohol, hookah and of course great food.

The bar in BQ is something special – in each restaurant the bar stand is a “sole” of a place, where professional bartenders work non-stop. A distinctive feature of bar menu is a hole line of different shots which are served on special rails.

Every last Friday of the month all restaurants hold Tigrus Party. 1% from revenue received on that day is sent to animal fund which helps to preserve tigers in Amur region. As well, clients can make a donation, by ordering a dish with special “tiger cost” or telling about it to the waiter.

The concept of this restaurant is unique. The chef has decided to make a restaurant with mix of good food, Italian atmosphere and reasonable prices.

In the menu you can find a variety of amazing dishes : salads, soups, meat and special offers from chef, and of course an assortment of the best Italian desserts.

The main dish is – PINZA, the product that does not have any analogue in Russia. It is a true innovation in world of pizza, and it guarantees excellent quality and high definability.

We took the plane from Dubai to Moscow and discovered the culinar world of Valentino Bontempi.

Mr Bontempi, everybody knows ‘pizza’, but what is “pinza” ? Is it healthier than pizza?
Pinza is the “mother” of pizza, because Italians have invented first invented “pinza”, since the Roman Empire. The main difference is the special mix of flavour (without glutene), and a longer period of preparation of paste (the final product is much more dietetic). Pinza is healthier, digestible, and low calorie.

Where were your roots in Italy , and how did your roots influence your gastronomic touch?
I am originally from the North of Italy, Lormbardia region.
Gastronomic traditions over there consist in simplicity, healthy food and the use of 2-3 products in 1 dish.

The taste is more important than a good “look” or presentation.

This is your first restaurant here in Russia?
No, I have 2 restaurants in Moscow: Pinzeria by Bontempi and Bontempi restaurant. I have also opened some other restaurants in Russia, Georgia, etc. Always busy ?

What do you like about the Russian cuisine ?
Oh, I love all these gorgeous Russian soups: Russians soup is similar to the feelings of Italians towards their “pasta”…It’s a must for every day.
I started eating the various Russian soups at the very beginning of my stay in Russia and soon fell in love with it.

Are there any links between Russian and Italian cuisine?
Our “cuisines” are very different. Russian cuisine is much more similar with French cuisine.

If You had a culinary dream…what would it be ?
I would like to make a big chain af fast food, but only healthy, cheap and tasty for everyone.

OK, You have new concepts in mind ?
I am always working on new concepts, always inspired by something interesting. The point is that my concepts are often copied by others (and not in the best way).

Do You like the Arabian kitchen as we serve in the Gulf region ?
I have never been in UAE yet, but i would like to visit it! i have tried Arabian kitchen in Moscow, and i like it for it’s healthy ingredients.

Any favorite dishes ?
Pinza! -) and ‘penne al pomodoro’ !

Have You ever been in Dubai ?
No, but i am going to come with my son on holidays.

Yuzhane (means “Southerns”) is a recently opened restaurant in the center of Moscow. It is the first Moscow project of Takhir Kholikberdiev, a pioneer of meat gastronomy in Russia.

In 2013 Takhir opened his first restaurant in Krasnodar (city in the South of Russia) called “Skotina”. It is the only restaurant in Russia which the cattle is specially raised for. “Kubanskoe myaso” cooperative was established especially for the needs of the restaurant. It includes about 60 producers of beef, pork and lamb from the Krasnodar territory, the Republic Adygea and the Karachay-Cherkess Republic.
Now, Tahir has decided to introduce his philosophy to the inhabitants of Moscow. He has brought all the best recipes and products of the South of Russia, and does not intend to abandon his principles.

They are stated even in the menu:
1. We are not limited to cooking steaks from the premium parts of the carcass. In our recipes, we use every part to create delicious food. We suggest you go against the “meat fascism” too and expand your tastes. Quality of meat and cooking technique are not defined as “tender or not tender”!
2. We are against produce and meat discrimination– when beauty standards and the appearance of the dish are more important than taste or quality.
3. We are against violence! We only allow for the correct slaughter of animals as part of the food chain and nothing more.
4. All meat served in our restaurant is from the regions of Krasnodar (“Kubaskoe Myaso” cooperative), Bryansk (“Miratorg”), and Voronezh (“Primebeef”), as well as small producers from the Republic of Adygeya, the Rostov Region and the Karachayevo-Circassian Republic. We are constantly expanding the geographic area and are ready for new discoveries and tastes.

The restaurant does not intend to hide from the eyes of the guests the process of cooking, so there are multiple zones with an open grill (length of 2.5 meters), the cast iron smokehouse, maturing meat camera, butcher table and barrels for dry salting.
The space of almost 800 square meters is divided into two zones: the ground floor cafe with a bar with an affordable menu with a huge meat section and the first floor where more meat dishes are served in a restaurant atmosphere. It is important to understand that “Yuzhane” is not a steak house. The main slogan of the project is ”all cuts are edible”. So only a quarter of the menu is devoted to premium steaks. The rest is the space for experiments with meat and other products.
The chef is Roman Shubin familiar about the projects of the “Meat club” and “Voronezh”.
Here you can not only eat the Cuban specialties, but also drink them.

You can find the beer from Big Village Brewery (Tahir’s own brewery in Krasnodar where citrus wheat ale South Trip and Imaginarium IPA are manufacturing). And for those who like something stronger, there is a draught tincture on distillate and smoked pear, the recipe of which was invented in Krasnodar restaurant “Skotina”.
